Healthy Nut Recipes


I have been working to create more protein healthy and full of nutrition snacks to have on hand or to grab quickly when you need to eat within a window of time. The ingredients in the granola are dense and will fill you up without eating loads of it. Eat this plain when in the mood for something sweet, salty or nutty, throw it in a salad with some fresh berries and top with olive oil mixed with balsamic vinegar, spread on top of an apple with almond butter or top it on your favorite plain organic yogurt. As always make sure to purchase your ingredients organic to ensure they do not contain pesticides or GMO's. I find the best prices in bulk at my local co-op on the nuts and seeds. Dried cherries are on the high end so you can substitute with cranberries as a comparable option.

Melt in Your Mouth Granola

1/2 cup of vegan butter (ghee or organic butter work too)

1/2 cup of coconut sugar (organic dark brown sugar works too)

1/2 cup raw honey

1/2 cup of sunflower seeds (pumpkin seeds work too)

1/2 cup of flax seeds

1 cup of almonds

1 cup of walnuts

2 cups of pecans

3 cups of oats (gluten free is best)

1 cup dried cherries (could use dried cranberries)

Preheat oven to 350 degrees. Mix together the butter, sugar and honey in small saucepan until well blended and sugar is dissolved on low-med heat.

Place parchment paper on baking sheet and spread the oats and seeds on the parchment paper and then pour the butter mix on top of the oats and seeds. Bake for 10 minutes. After 10 minutes remove from oven and add the dried cherries and mix and bake for another 10 minutes. Cool down and break apart chunks and store for up to 2 weeks. (Glass containers are best for storage such as a glass cake dish)

Turmeric Walnuts

These are great to have on hand for snacking or I throw them in a salad. 100% organic ingredients to ensure no pesticides are on the nuts. Turmeric is so good for your body for many reasons mainly to keep inflammation down. Any way you can add this to your diet organically you are doing your body a wonderful act of kindness.

1.5 cup walnuts

2 T. coconut oil

1 t. Himalayan salt

1 tsp turmeric

Melt coconut oil in a 10" fry pan on medium heat. Once oil melts add in the walnuts to stir and coat with the oil. Sprinkle turmeric and salt on. Continue to cook for about 4 minutes lowering heat to almost low. Remove and store in glass container for up to a week.
